African Americans and Vitamin D Deficiency

CHEF EMANUEL’S 411: All African Americans have some level of Vitamin D Deficiency. In many cases it can be quite severe. Vitamin D is mostly absorbed into the body through the Suns Rays. It is the best way to get it naturally. However, the pigmentation of African Americans provides protection from the Suns Rays. It acts as a Sun Block., which makes it difficult to take in this nutrient.

Vitamin D is essential in helping to protect you from Prostate and Breast Cancer; Heart Disease, Diabetes, Osteoporosis and Hypertension. It strengthens bones, teeth and hair and helps to reinforce your immune system. Low Vitamin D levels can lead to Depression, Anxiety, Chronic Fatigue, Muscle Cramps, Weakness, Inflammation or worse.

Catfish, Salmon, Mackerel, Herring, Tuna fish, Shrimp, Trout, (Can Sardines are a Powerhouse) Dried Mushrooms (Buttons and Shitake), Fortified Juices (Orange Juice etc.), Eggs, Milk, Ice Cream, Cheeses, Fish Oil, Vitamin Supplements and Cod Liver Oil. Cod Liver Oil may taste like the bottom of an old shoe, but it also helps to improve Brain Function.
