Tilapia W/Chimichurri Sauce and Broccoli Sautée

Tilapia is a species of fish which is native to the lakes of Africa. A common Bible story says Jesus fed 5,000 people with five loaves and two fish, which the World’s leading scholars surmise were tilapia. In 2012 Americans ate 475 Million lbs. of Tilapia, four times the amount consumed a decade ago, making this delectable native African species the most popular farmed fish in the United States.

Chef Emanuel’s ‘Crispy Lemon Pepper Catfish’ Part 1

“Soul Food Cooking is not an amateur sport” EW

Check this out. I ate at a Southern Food restaurant in Dallas, Texas. Southern Food? whatever that is. Anyway, I ordered the Fried Catfish. When my order arrived the food was so bad, I wanted to ‘Pimp Slap’ the cook ‘Chicago Style’. (Backhand with a Pinky) LOL First off, the fish had no color. It was mushy and had the texture of wet Wonderbread. It was loaded with salt and was as bland as a hay sandwich. It was obviuos to me as a chef that the catfish had been fried in flour and at the wrong temperature. I hope you’re not doing this at home. Because if you are, I’m afraid you will be issued a ‘Soul Food Citation’. You must then appear in ‘Soul Food Court’ and be sentenced by a jury of my peers. LOL In light of this and many other blatant Soul Food debacles,  I’ve decided to share one of my coveted recipes with you for FREE . Try this one on for size.                        I hope you enjoy it!

WHAT IS DIRTY RICE? What Makes it Dirty?

WHAT IS DIRTY RICE! Dirty Rice is a Centuries Old SOUL FOOD Classic created by African Americans. Much of the History and origin of this dish was hidden from History and therefore not accurately recorded. Consequently, much has become lost in translation as have many other African Americans contributions. Some place its origin in the Coastal States of the Louisiana Bayou and some in the Carolina Low Country. What we do know for certain is WHO created it. Dirty Rice is yet another creative and delicious Soul Food dish designed to stick to your ribs and cure what ales you.

Traditional Dirty Rice is a blend of white rice, aromatics and spices mixed and cooked with small pieces of meat, such as ground chicken liver, gizzards or giblets. The dark color of the dish comes from browning the meats. Over the years, many variations of the dish have appeared. Today some use link sausage, Beef or other meats in place of the ground chicken liver or gizzards. This is particularly the case in some upscale eateries.
This American Classic should always have bold flavors, textbook color and texture. Pictured is a dish I created for a restaurant client in New Brunswick, New Jersey.
